Miso is a Japanese paste made primarily from fermented soybeans and has a salty, umami flavour. It's probably best known as the main ingredient in miso soup but can also be used in sauces, spreads and marinating meats and fish.
This is a great twist on plain hummus and will make those healthy lunches or summer picnics that little bit more interesting. Plus, it's amazingly simple to make.
25g white miso paste
2tbsp toasted sesame oil
Salt and pepper
Pitta bread or vegetable sticks, to serve
Toss the chickpeas, miso paste and oil into a food processor and chop until you get the desired consistency - this can be smooth or left a bit coarser for texture. Give a little taste then season with the salt and pepper.
